Abstract:
A gelling agent comprising agar and gelatin which rapidly gels at a temperature below 10 �C and redissolves at 20 to 80 �C; and a food product comprising a food and the gelling agent. The gelling agent gels rapidly and firmly and has a redissolving temperature arbitrarily adjustable. When used for producing food products, this agent can simplify the process steps and remarkably improve the productivity. As the redissolving temperature of the food product can be adjusted to a temperature suitable for eating the food, it is possible to impart the function of indicating the termination of heating to the food product.
