Abstract:
The present invention relates to a method for preparation of nondigestible dextrins and, more specifically, to a method for preparation of nondigestible dextrins in nano-scale sizes by conducting continuous debranching and recrystallization processes on starch particles. According to the present invention, nondigestible dextrins that have a high content of resistant starch (RS) and are excellent in heat and enzyme stability and have high crystallinity can be prepared at high yield through continuous debranching enzyme treatment and recrystallization of starch chains. In addition, after continuous debranching enzyme and recrystallization treatment, additional acid treatment or enzyme treatment may produce nondigestible dextrins in as small as nanoscale sizes. Moreover, the nondigestible dextrins prepared according to the present invention are expected to find effective applications in various fields including medicines, cosmetics, new food materials, food additives, and chemical products, etc., such as dietary fibers, fat replacers, coating agents, reinforcements, and the like.
