Abstract:
The present invention relates to a method for preparing turanose using amylosucrase, and a sweetner using the turanose, and more specifically, to a method for preparing a high-purity turanose, the method enabling the preparation of high-purity turanose through enzyme reaction that treats amylosucrase on the solution having sucrose alone or sucrose with fructose, and to a sweetner using the turanose.
