Abstract:
Provided are a variant of glutamate-cysteine ligase (gshA) suitable for production of γ-Glu-Val and a method for manufacturing γ-Glu-Val-Gly using the same. Using the gshA mutant having a specific mutation, γ-Glu-Val is produced with Glu and Val as starting materials, and furthermore, γ-Glu-Val-Gly is produced using the γ-Glu-Val and Gly as starting materials. Using the gshA mutant having a specific mutation, γ-Glu-Val-Gly is produced using Glu, Val, and Gly as starting materials.
