Abstract:
The present application provides a peanut meal production method using bacillus velezensis and pediococcus acidilactici for stepwise fermentation, which relates to the technical field of biology and mainly aims to provide a fermentation process improving the functional characteristics and nutrition levels of the peanut meal. Further provided are a fermented peanut meal prepared by the process and an application thereof in reducing the abdominal fat rate of broiler chicken and improving the meat quality. The peanut meal fermentation method comprises steps such as raw material pretreatment, stage-one fermentation, discharging adjustment, stage-two fermentation and discharging adjustment. The fermented peanut meal prepared by the fermentation process of the present application has significantly increased total flavonoid content, antioxidant performance, crude protein content, acid-soluble protein content, total acid content, total unsaturated fatty acid content and the content of some essential amino acids. The arginine/lysine ratio is closer to a desirable amino acid ratio, and AFB1 and phytic acid are remarkably degraded. The fermented peanut meal can be added into a broiler chicken feed to significantly reduce the abdominal fate rate of 42-day broiler chicken, improve the flavor characteristic of breast meat, significantly increase the content intramuscular protein, total amino acids, flavor amino acid and monounsaturated fatty acid, slow the pH value reduction, and increase the shelf life.
