Abstract:
A method for preparing a Pickering emulsion using peanut protein isolate and a Pickering emulsion prepared by the method. The method comprises preparing a peanut protein dispersion by using a peanut protein isolate solution as a raw material; preparing a proteoglycan mixed dispersion by using a polysaccharide solution and the peanut protein isolate dispersion; adding transglutaminase to the proteoglycan mixed dispersion, and preparing gel blocks via a crosslinking reaction; preparing a microgel particle dispersion by using the gel blocks as a raw material; and adding the microgel particle dispersion to an edible oil to prepare the Pickering emulsion. Granulation is carried out by using commonly-used equipment such as high-speed shearing and high-pressure homogenization apparatuses, and the Pickering emulsion is prepared by high-speed shearing. The preparation process does not involve addition of inorganic materials, such that the prepared Pickering emulsion has good biosafety and high biocompatibility. The prepared Pickering emulsion can be stably preserved at room temperature for more than 30 days and can be used as a carrier system for fat-soluble and photosensitive active substances.
