A probiotic microcapsule and a preparation method therefor, relating to the technical field of probiotic products. The method comprises the following steps: (a) preparation of a probiotic-loaded capsule core: mixing capsule core materials comprising probiotic powder, microcrystalline cellulose and starch, then adding a hydroxypropyl methyl cellulose solution and mixing well; and preparing the obtained mixed material into a spherical particle capsule core by using an extrusion-spheronization method; and (b) atomization-based coating: forming a single-layer or multilayer coating on the capsule core by using a coating material solution by means of atomization, to obtain a core-shell microcapsule. The prepared probiotic microcapsule is large in loading capacity, uniform in microcapsule particles, and controllable in particle size; moreover, the probiotic microcapsule is tolerant to storage, targeted to intestinal tracts and resistant to gastric acid, and has high temperature stability.
