Abstract:
The present invention relates to a probiotic Momordica charantia fermentate with enhanced anti-diabetic, anti-dementia, and anti-oxidative functions and a preparation method therefor and, more specifically, provides a method for preparing a Momordica charantia fermentate having enhanced anti-dementia activity and a Momordica charantia fermentate prepared according thereto, wherein the method comprises the steps of: adding a sugar ingredient to prepare a Momordica charantia fermentate with a sugar content of 3 to 15 degrees Brix; and fermenting the prepared mixture by inoculating a probiotic strain thereinto. With enhanced anti-dementia, anti-diabetic, and anti-oxidative activities, the Momordica charantia fermentate can be applied to a pharmaceutical composition and a health functional food composition for prevention, treatment, or alleviation of cognitive impairment or diabetes mellitus.
