Abstract:
The present invention relates to the technical field of food processing, and in particular, to a rapid and non-destructive quantification method for the taste characteristics of fried rice. The method comprises three steps of fried rice seasoning quantification model construction, fried rice raw material type identification model construction, and fried rice taste characteristic quantification representation. A seasoning quantification model is established by using the sensitivity of a spectral signal to a change in the content of a seasoning liquid. An analytic equation of key parameters of the seasoning quantification model is constructed according to the feature that the total amount of seasoning in finished fried rice is equal to that of seasoning added in a frying process of the fried rice. Rapid construction of the seasoning quantification model is realized in an equation solving mode. Meanwhile, the present invention provides quantification evaluation indexes for the taste characteristics of the fried rice and a calculation method therefor by obtaining the spectral features of fried rice particles one by one and rapidly measuring the contents of different types of seasonings on single-particle fried rice raw materials in combination with the constructed seasoning quantification model and fried rice raw material type identification model, and provides a new technical means for researching and optimizing the taste characteristics of the fried rice.
