Abstract:
PROBLEM TO BE SOLVED: To provide a packed and burned pizza having appearance and functional property equal to fresh pizza, maintaining long term storage stability at ordinary temperature, maintaining appearance, hardness when eaten and functional property during storage life, having ready-to-eat state without a treatment for cooking before eating.SOLUTION: There is provided a ready-to-eat pizza which can be stored for long time at ordinary temperature and is packed, has appearance and functional property equal to fresh pizza, has a burned base of a dough having flexibility and toppings containing cheese on a surface, in which the topping uses no preservative, and the base and the topping of the surface have practically same level water activity (Aw). There is provided a pizza having water activity (Aw) of the pizza of 0.80 to 0.92, whole moisture content of 26 wt.% to 30 wt.% based on total weight of the pizza, preferably 28 wt.%.SELECTED DRAWING: Figure 1
