Abstract:
To provide means to solve the problem that conventional noodle food products have a high carbohydrate composition due to a fact that a large amount of wheat flour is used in the noodle-making process.SOLUTION: A method of producing high protein noodle of this invention can increase a protein content in a composition of noodle food product by kneading amino acid into ingredients in the noodle-making process and turn a food product merely for satisfying or relaxing a taker into a food product for supplementing essential nutrients.
