To provide a chitosan oligosaccharide having an improved taste compared to conventional chitosan oligosaccharides, and a method for producing the chitosan oligosaccharide.SOLUTION: In a production process of a chitosan oligosaccharide, the production of a chitosan oligosaccharide that does not contain hydrochloric acid or organic acid is attempted, and amorphous chitosan is dissolved in carbonic acid for enzyme decomposition, so that the taste is successfully improved compared to conventional chitosan oligosaccharides, completing the invention.SELECTED DRAWING: None
