Abstract:

To provide beer, sparkling wine and malt-fermented beverage each containing a high content of inositol which is a vitamin-like substance expected to have an effect on the prevention, or the like, of a fatty liver and cirrhosis, and a method for producing them.

The subject method for producing the beer, sparkling wine or malt-fermented beverage is provided by adding a prescribed amount of a phytase or an acid phosphatase in priming time of the production of wort to produce the wort containing a high inositol content. The method is provided by adding enzymes such as the phytase, acid phosphatase, or the like, contributing to the dephosphoryzation of phytic acid on producing the wort.
