Abstract:
To provide a production method of a gluten-free noodle which is simply producible.SOLUTION: A production method of a gluten-free noodle comprises: a mixing step of adding water to a raw material powder free of glutenin or gliadin and mixing them to obtain aggregate-form noodle dough 21 free of gluten; a noodle strip formation step of rolling the aggregate-form noodle dough 21 to obtain a belt-shaped noodle strip 22; a compositing step of rolling the noodle strip 22 together with the aggregate-form noodle dough 21 to obtain a composite noodle strip 23; a rolling step of rolling the composite noodle strip 23 to a predetermined thickness; and a cutout step of cutting out the rolled composite noodle strip 23 into a predetermined noodle line shape.SELECTED DRAWING: Figure 3
