Abstract:
PURPOSE: To obtain a threading lowering agent containing a homogenate (treated material) of animal liver, lowered in threading property, having velvety smoothness and excellent texture and capable of providing nice fermented soybean.
CONSTITUTION: The objective lowering agent containing a homogenate of liver of animal (cow or pig) and/or treated material thereof. Furthermore, preparation of the homogenate, etc., is preferably preferably 0.5-2(wt./wt.)% based on the weight of fermented soybean.
