Abstract:

To provide a baking drop inhibitor excellent in effect of inhibiting baking drop when baking chocolate, and to provide baked confectionery using the same.SOLUTION: A baking drop inhibitor for chocolate has inulin as the active ingredient. Due to that chocolate is used for instance, as coating confectionery for coating center confectionery, and the product is baked, at least the surface layer thereof is thermally denatured and forms a tissue with heat resistance so as to enable eating without making the fingers dirty. Furthermore, when providing a confectionery product which presents peculiar flavor and texture due to thermal denaturation of chocolate, it is possible to suppress unevenness of a product shape and stably produce only by mixing inulin with the chocolate as coating confectionery.SELECTED DRAWING: None
