PROBLEM TO BE SOLVED: To provide a production method of bread using a dough raw material containing a soybean protein, excellent in bread production characteristic, and capable of suppressing oil absorption when forming bread crumb.SOLUTION: A production method of bread includes steps of: preparing fat-containing defatted soybean by mixing defatted soybean with an edible fat; and blending the fat-containing defatted soybean into a dough raw material of bread.
