Abstract:
To provide a coating oil and fat composition that is transparent even after coating and solidification and does not compromise the appearance of baked confectionery.SOLUTION: A coating oil and fat composition is prepared which contains at least 0.7 wt.% of diglycerin monooleic acid ester (diglycerin monooleate). Oils, fats, oil-fat mixtures and the like used for normally and general coating applications can be used as needed as oils and fats to be blended other than the emulsifier. The oil and fat composition of the present invention does not turn white even after solidification on the surface of the baked confectionery, and does not obstruct its texture or brown color.SELECTED DRAWING: None
