To provide choux doughnut which is crispy and has excellent melt in the mouth, and a method of producing choux doughnut.SOLUTION: The aforementioned problem is solved by using choux doughnut mix flour mainly composed of starches, in which the choux doughnut mix flour contains 13-42 mass% of chemically modified waxy potato starch relative to the total amount of starches.SELECTED DRAWING: None
