PURPOSE: To prepare a clear soup containing young sardines in a state immediately eatable by heating, preventing collapse of shape and lowering of freshness, by filling a seasoned soup and a specific amount of boiled young sardines in a container and freezing the content.
CONSTITUTION: A container 3 is charged with a seasoned soup 1 and ≤35wt.%, preferably 10W20wt.% of boiled young sardines 2 based on the seasoned soup 1. The container is left at rest to settle said young sardines 2 to 1/3 from the bottom of the vessel 3. The content is frozen to easily obtain a clear soup containing young sardines, having a flat surface on at least a part of the outer circumference and containing the young sardines 2 opposite to the flat part. When the frozen soup is heated facing the flat part downward, the soup can be thawed without causing the young sardines to boil in the soup. The young sardines can be eaten in the most delicious state by this process.
