Abstract:
PROBLEM TO BE SOLVED: To control the coagulating rate of a coagulant such as magnesium chloride for soybean milk and obtain a coagulant composition capable of producing a Tofu having a fine and homogeneous internal phase, good in water retaining properties and excellent in flavor by dispersing a specific inorganic salt-based coagulant in a specified aliphatic fatty acid ester.
SOLUTION: This composition is obtained by dispersing (A) an inorganic salt-based coagulant which has 50 μm maximum particle diameter and is preferably a mixture of one or more kinds of magnesium chloride, magnesium sulfate and potassium chloride in (B) an aliphatic fatty acid ester of a polyhydric alcohol sparingly soluble in water (e.g. a glycerol condensed ricinoleic acid ester or a propylene glycol oleic acid diester). The formulating ratio of the ingredient A in the composition is preferably 10-50 wt.%.
