Abstract:
To provide emulsions stabilized by food grade materials which are not listed in the ingredient list, and to provide double emulsions stabilized by a small number of edible materials.SOLUTION: There is provided an edible emulsion comprising at least one aqueous phase and at least one lipid phase wherein the emulsion is stabilized by particles of an edible inorganic salt having a solubility in water of less than 1 g per 100 mL at 20°C, wherein the particles have between 3 and 12 wt% fatty acids coated or adsorbed onto their surface, wherein at least 80 wt% of the fatty acid coated or adsorbed on the edible inorganic salt particles has from 6 to 22 carbon atoms, and wherein the edible inorganic salt is calcium carbonate.SELECTED DRAWING: None
