Abstract:

PROBLEM TO BE SOLVED: To attain esterification of fatty acid with alcohol without elimination and deactivation of the enzyme by immobilizing fat-lytic enzyme to immobilization support and bringing the enzyme into direct contact with the reaction substrate without drying.
SOLUTION: A fat-lytic enzyme (for example, lipase) is immobilized by using a porous anionic ion-exchange resin or the like as an immobilization support. As a pretreatment for immobilization, this support is treated with a lipid-soluble fatty acid (for example, ricinoleic acid) or a lipid-soluble fatty acid derivative (polyglycerol fatty acid ester or the like) and then, the enzyme is adsorbed and immobilized. The immobilized catalyst is, without drying, brought into direct contact with the reactive substrate to effect the objective esterification. Thus, the desorption and deactivation of the enzyme are inhibited and fatty acid and alcohol are efficiently and stably esterified for a long period of time.
