Abstract:

PROBLEM TO BE SOLVED: To provide a method of producing a tea beverage that has high catechin content, good flavor and taste, causes no loss of its intrinsic aroma or no unpleasant smell when it is heat-treated for sterilization, and minimizes miscellaneous tastes and bitter taste.
SOLUTION: The beverage is prepared by formulating the component (A), a polyphenol solution that is obtained by extracting the residue after green tea leaves are extracted with water at a temperature of <10°C with water at a temperature of ≥50°C and the component (B), an extract of half-fermented tea leaves or an extract of completely fermented tea leaves.
