To obtain the subject preparation containing a specific aqueous dispersion phase in an oil, avoided in the damage of the product and in the loss of active substances by the affection of moisture, air and heat generated under production conditions, excellent in biological utility, chemical stability and colorability, and useful for cosmetics, etc.
This liquid carotenoid preparation miscible with an oil contains in an oil an aqueous dispersion phase (the content of the carotenoid is preferably 0.01-10wt.%) in which one or more kinds of carotenoid particles stabilized with a protecting colloid such as gelatin are dispersed and which has a particle diameter of <100μm, as a double dispersion system. The liquid carotenoid preparation is obtained by emulsifying the aqueous dispersion of one or more kinds of carotenoids containing a protecting colloid in the oil in the presence of an emulsifier.
