Abstract:

To obtain a low alcohol concentrated wine composition having mellow wine flavor from natural flavoring ingredient mainly high-class alcohol and ester kinds, and thick taste such as body taste and astringent taste, and suitable for cooking and food processing.

This low alcohol concentrated wine composition which contains 1.5-4.0 (V/V)% of alcohol is obtained by warming and ripening wine or wine added with alcohol and/or saccharide at 40-60°C for 1-6 months, and vacuum concentrating the product.
