Abstract:
To provide a method for producing a wheat bran processed product, reducing bran smell of wheat bran, roughness of texture or the like to improve flavor/texture due to a low-cost and efficient production process compared to a conventional method.SOLUTION: A method for producing a wheat bran processed product includes steps of: a lactic acid fermentation step of performing lactic acid fermentation by adding 70-90 pts.mass of a lactic acid bacterium suspension to 100 pts.mass of heat-treated wheat bran; and a roasting step of roasting wheat bran after the lactic acid fermentation.EFFECT: Preferable usage as a food material becomes possible due to reduced bran smell, harshness, roughness of texture and improved flavor.SELECTED DRAWING: None
