Abstract:

PURPOSE: To obtain a moderately digestible and absorbable material for foods having taste and texture similar to those of normal starch and a wide range of uses and a method for producing the above-mentioned material.

CONSTITUTION: A moderately digestible and absorbable material for foods is composed of a starchy substance and a modifier for modifying the aforementioned starchy substance. The aforementioned material is characterized by water absorptivity which is reduced to ≤90% based on that of unmodified starchy substance. Furthermore, fatty acid compounds are preferred as the above-mentioned modifier.
