Abstract:

To provide a method capable of manufacturing a carrot jam without damaging nutrients of the carrot.

This carrot jam is manufactured in the following process: softening chips of carrot chopped into a predetermined size by boiling, steaming or using a microwave oven, or the like, forming a liquid mixture by adding thereto finely chopped apple after removing the core and lemon juice and processing the mixture by using a mixer, adding sugar, thick melt syrup, agar and table salt to the liquid mixture and charging into a pan and condensing and then adding lemon squeezed juice to the condensed jerry like mixture. The objective carrot jam having high nutritive value is obtained because the damage to the nutrients such as carotin can be suppressed.
