Abstract:
To provide a method for producing a brown sugar lump by which the brown sugar lump excellent in solubility and flowability, scarcely coagulating even under a normal preserving condition at a general household and excellent in handleability can be produced without deteriorating a flavor and an aroma.
This method comprises adding a fatty acid ester to a powdery brown sugar which is a raw material and uniformly mixing, granularly granulating the powdery brown sugar by a wet granulating machine and then drying the granulated brown sugar lump by a hot-air dryer to make the dried granule.
