This substitute of the potassium bromate substantially contains the ascorbic acid, a food acid (an acid in a food such as a fruit) and/or a phosphoric acid salt. The substitute is the slow-acting oxidizing agent functioning through the whole production process. The substitute is also the oxidizing agent capable of producing a properly oxidized dough required for production of a high-quality yeast fermented product by using various kinds of methods in a baking process.
