Abstract:
To provide a method of producing a wheat-bran-contained bakery food product in which a bakery food product can be produced, the bakery food product having good secondary working, being voluminous, and having good food feeling and resistance with age (resistance to ageing) even with wheat bran.SOLUTION: There is provided a method of producing a wheat-bran-contained bakery food product which contains wheat bran of 5-50 pts.mass in cereal flour of 100 pts.mass used as raw material, and further, in which (A) glucose oxidase and (B) at least one material selected from a group consisting of hemicellulase, cellulase, and amylase are combined with dough.SELECTED DRAWING: None
