PURPOSE: To obtain the titled food capable of reducing energy and miniaturizing a sterilizer because heat sterilization can be carried out at high temperature in a short time, by using gelatinous agar obtained from novel agar, showing high-melting characteristics.
CONSTITUTION: First agar consisting of (A) 70W100wt.% based on sum of agaroses of an agarose comprising alternately repeated 1,3-bonded β-D- galactopyranose group and 1,4-bonded 3,6-anhydro-α-L-galactopyranose group and (B) 0W30wt.% of an agarose except the component A is used as a raw material. Then the agar is processed into gelatinous agar having 0.6W1.5wt.% concentration and mixed with syrup which has 0W30 Brix degrees of dextrose equivalent and is acidified with citric acid into pH2.8W3.9 to give the aimed food.
