Abstract:

To obtain a gene which encodes a protein having activity of transferring a glucosyl to a hydroxy in the 5-position of anthocyanidin and then transferring a glucosyl to a hydroxy in the 3-position thereof.

This gene is obtained from a rose, encodes a protein having a number of amino acid residues of 473, and encodes the protein having activity of transferring the glucosyl to the hydroxy in the 5-position of the anthocyanidin and/or activity of transferring the glucosyl to the hydroxy in the 3-position of anthocyanidin 5-glucoside.
