Abstract:
PURPOSE: To obtain a nonalcoholic beer which has the rich flavor of beer equiv. to that of brewed beer by using the non-fermented malt juice reduced from the dry powder of the malt juice by using water and carbon dioxide as essential components. CONSTITUTION: The non-fermented malt juice which is obtd. by reduction from the dry powder of the spray dried malt juice by using the water and has dry contents of 2.5 to 6% in weight fraction and the carbon dioxide are used as the essential components. If desired, 0.01 to 5%, in weight fraction, additives such as spices, color additives, pH control agents and froth stabilizers, and a proper amt. of hop oil are incorporated therein.
