Abstract:
PROBLEM TO BE SOLVED: To provide an oil-and-fat composition for producing a laminar starch swollen food product excellent in melting feeling in the mouth using oil-and-fat having vertical SFC which has good extensibility and workability, in particular, an oil-and-fat composition which can be produced without using a special production apparatus such as pressurization.SOLUTION: Oil-and-fat contained in an oil-and-fat composition satisfies the following conditions (a) to (e): (a) a content of a lauric acid-containing triacylglycerol of 10-50 mass%; (b) a content of L2X of 5-30 mass%; (c) the total content of LX2 and XXX of 10-34 mass%; (d) a content of LLL of 2-10 mass%; and (e) SFC (solid fat content) of 30% or more and 50% or less at 10°C, 10% or more and less than 25% at 20°C, and less than 13% or less at 30°C.SELECTED DRAWING: None
