Abstract:

PROBLEM TO BE SOLVED: To provide a new-type pan-roasted tea produced by making the best use of flavor and taste peculiar to pan-roasted tea; and to provide a method and equipment for producing a larger amount of the tea at a lower cost and in a shorter time in comparison with a conventional method.
SOLUTION: The method for producing the pan-roasted tea comprises the following processes: (a) a process of supplying and measuring raw tea leaves; (b) a process of continuously degreening the tea leaves where the raw tea leaves supplied in the process (a) are continuously roasted by heating to degreen an oxidative enzyme; (c) a process of eliminating powder where waste parts of leaves and stems, and scorched parts respectively produced in the process (b) of continuously degreening the tea leaves are eliminated; and (d) a process of continuously drying the tea leaves where the roasted tea leaves subjected to the powder elimination in the process (c) are continuously dried.
