Abstract:

To provide a method for perfectly degrading a mushroom with enzymes, capable of approximately perfectly degrading the fruit body of the mushroom and easily and effectively utilizing the degradation product for various kinds of foods, etc.

This method for perfectly degrading a mushroom with enzymes comprises treating the mushroom with an intercellular substance-degrading enzyme containing a protopectin-degrading enzyme as a main component and produced from a filamentous fungus belonging to the genus Rhizopus and simultaneously with a cellulose-degrading enzyme agent containing a cellulase as a main ingredient and produced from a filamentous fungus belonging to the genus Trichoderma or a cellulose-degrading enzyme containing a cellulase and a hemicellulose-degrading enzyme as main ingredients and produced from a filamentous fungus belonging to the genus Aspergillus niger to approximately perfectly degrade the fruit body of the mushroom into a rice gruel-like product.
