Abstract:

PROBLEM TO BE SOLVED: To obtain a phage-resistant and practically usable Natto bacillus that is resistant to phage infection and can produce Natto (fermented soybeans) that well draw gooey threads, have good texture and taste by bringing KS phage into contact with Natto bacillus and separating and collecting the cell bodies from the colony grown without bacteriolysis.
SOLUTION: KS phage is brought into contact with Natto bacillus, which is grown without bacteriolysis and separated and collected from the colony to provide a practical Natto bacillus that is sensitive to KS phage but resistant to bacteriolysis. This phage-resistant practical Natto bacillus is the phage- resistant practical Natto bacillus KS1R5 (FERM BP-5803) or its mutant strain.
