Abstract:
To provide: (1) a fat composition having plasticity without depending on a fat crystal component; and (2) a fat composition making it possible to obtain a bakery food product that is soft and moist and has good melt-in-the-mouth and crispy texture.SOLUTION: A plastic fat composition, whose SFC (solid fat content) at 20°C is 0.1-5%, includes 40-70 mass% of an edible powder. A saturated fatty acid content in a fatty acid composition in fat and oil included is preferably 45 mass% or less. The edible powder is capable of including proteins and/or polysaccharides. The plastic fat composition is manufactured by mixing fat and oil whose SFC at 20°C is 0.1-5%, and the edible powder, followed by heating so that a product temperature reaches 60°C or above.SELECTED DRAWING: None
