Abstract:

PURPOSE: To produce decocted tea containing excellent flavor component in a short time, by decocting tea leaves with aqueous solution containing glycerol or sugar (excluding dextrin).

CONSTITUTION: An aqueous decoction is produced by decocting tea leaves (black tea, green tea, Chinese tea, etc.) with water, warm water or hot water containing glycerol or sugar. The glycerol or sugar may be added to the tea leaves beforehand. A sugar having low molecular weight such as source, glucose, etc., has higher effect than a sugar having high molecular weight such as dextrin.
