Abstract:
PURPOSE: To obtain flakes of dried bonito highly containing an extract component, being prevented from oozing out of the extract in a pretreatment before slicing process.
CONSTITUTION: Dried bonitos are heated in a wetted hot air, broiled and heated at about 200-250°C so as the central temperature to be at about 70-100°C and the heated dried bonitos are cooled to about 60-30°C and sliced.
