Abstract:

PURPOSE: To prepare a food material having water resistance and cooking resistance almost free from smell and bitterness of oranges, by treating pericarps of oranges with a pectin eluent.

CONSTITUTION: Purified oils and fragrance components derived from flavedo are removed from raw or dried pericarps of oranges preferably by steam distillation or solvent extraction, a pectin eluent such as ammonium phosphate, sodium hexametaphosphate, etc. is added to powdered pericarps of oranges, which is adjusted with ammonia water to 8W11pH, stirred by a homogenizer to give a uniform paste, which is molded into a given shape and dried.
