PURPOSE: To produce a proteinous food having uniform quality, excellent taste and flavor, agreeable feeling to the tooth and high expansion degree, by kneading a protein raw material mixture containing a sulfur-containing compound as an expansion agent with an extruder under high temperature and pressure, extruding the kneaded mixture and optionally pulverizing the extrudate.
CONSTITUTION: A mixture containing a protein raw material such as defatted soybean, 0.01W2.0wt% sulfur-containing compound (e.g. sulfite) based on dried weight of the protein raw material and water is kneaded with an extruder under high temperature and pressure condition, extruded and optionally pulverized. A proteinous food having uniform quality, excellent taste and flavor, agreeable feeling to the tooth and high expansion degree can be produced by treating a protein raw material mixture containing a sulfur-containing compound as an expansion agent with an extruder.
