Abstract:

PURPOSE: To obtain pickle having high shelf stability without damaging taste, texture and appearance by pressurizing pickle under hydrostatic pressure of ≥a specific value.

CONSTITUTION: Pickle such as pickled radish, cucumber or Chinese cabbage is pressurized under ≥2,000kg/cm2, preferably ≥4,000kg/cm2 hydrostatic pressure preferably for about 20 minutes.
