To provide a processed barley composition for cooking maintaining barley particle shape, containing relatively high percentage of a dietary fiber, having a texture with good articulation specific to particles of barley, and low calorie property, and a general purpose dough for burning cooking using the same.SOLUTION: There is provided a processed barley composition for cooling consisting of processed barley by removing 70 to 90 mass% of a water soluble component from mainly albumen of purified barley, in which dietary fiber remains as a shape retention component of a fruit shape of the albumen. There is provided the processes barley composition for cooing, in which 25 to 400 pts.mass of rice and 10 to 75 pts.mass of pasty konjak are preferably blended to 100 pts.mass of the processed barley for cooking. There are provided granite by cooking the processed barley for cooking and a dough for burning cooking containing the granite.EFFECT: Energy per 100 g of the processed barley for cooking becomes low calorie of 100 kcal/100 g or less, and by using the same, the dough for burning cooking such as a dough for burned confectionery or a vegetable pancake expected to promote health is obtained.SELECTED DRAWING: None
