Abstract:

PURPOSE: To obtain a bread free from occurrence of cave-in in square bread, having good appearance and inner phase and excellent in palatability and taste and useful for buns, etc., by carrying out stamping before packing formed bread dough in a mold and drying the dough in a drier and baking the dough.
CONSTITUTION: Formed bread dough 1 is subjected to stamping using a cyclic groove 2, etc., so as to cause permanent deformation of the dough 1 before or after packing the dough 1 in a mold and dried in a drier and baked according to ordinary method to provide the objective bread.
