Abstract:

PURPOSE: To industrially and easily obtain an essence having both the flavor and freshness of a just squeezed juice and giving fruit beverages having good tastes by adding a small amount of the juice to an essence and subsequently subjecting the mixture to a high pressure treatment.
CONSTITUTION: 1pt. of an essence comprising a fruit flavor, especially a citrus flavor, and a small amount, preferably 0.01-0.5pt., of a juice such as an original juice, a diluted juice, a frozen juice or a citrus fruit are mixed with each other, and subsequently subjected to a high pressure treatment to obtain the objective essence. Either of a natural essence and a synthetic perfume may be used as the essence used as the raw material. The juice among apple, pea, grape, pine apple, etc., in addition to the citrus may be used as the juice.
