Abstract:
PURPOSE:To enable preservation of ell liver in a natural state for a long period of time, by boiling internal organs of eel in an aqueous solution of an alkali ion, washing with water, bagging a proper amount of the internal organs, adding an aqueous solution of an alkali ion to a bag, sealing and subjecting to retort sterilization. CONSTITUTION:Air bladders, gallbladders, etc., are removed from internal organs of eels, boiled in an aqueous solution of an alkali ion and washed with water. A proper amount of about one bowl of the internal organs is bagged, an aqueous solution of an alkali ion is added to bags, which are sealed and subjected to retort sterilization at about 120 deg.C for about 20 minutes. Consequently, the prepared liver matter has high sterilizing properties and shelf stability is extremely improved by using the aqueous solution of an alkali ion of slow oxidation. Therefore a hygienic and safe food is obtained.
