Abstract:
PURPOSE: To provide a method for producing palmitoleic acid, capable of producing a highly pure palmitoleic acid more simply and stably than by conventional methods.
CONSTITUTION: A kind of yeast, Kluyveromyces polysporus, is cultured in a culture medium to accumulate the produced palmitoleic acid in the cells, and the cells are collected. The whole fatty acids extracted from the cells contains the palmitoleic acid in an amount of ≥60%.
